Yeast: strains, generations and harvesting

Strains and slurries in the yeast store. The generation works itself out and the app tells you when a slurry is due for disposal.

The Yeast screen shows what is in the yeast store: slurries, their generation, their condition and what is due for disposal. The crew records pitching and harvesting on the phone at the tank.

Strains

First create a strain under Yeast → Strains with New strain:

  • Strain name and Lab designation, such as W-34/70,
  • Fermentation: Bottom or Top,
  • Recommend disposal after generation: which generation you stop at for this strain. If you do not track generations, leave it empty.

Generations

You do not have to count generations. A purchased slurry is generation 0. When you pitch a slurry of generation N, the harvest from that tank is generation N+1.

Record a purchased slurry in the office with Record a purchased slurry.

Pitching at the tank

  1. Scan the tank's QR label and tap Yeast on the tank card.
  2. Tap Pitch yeast and choose the Slurry.
  3. Enter the Volume in litres, the Wort temperature (°C) and the Aeration.
  4. If nothing is left in the yeast store, tick The slurry is used up, nothing left.

A wort temperature outside 0 to 50 °C is not accepted, because it is a typo. A discarded slurry cannot be pitched.

Harvesting

On a fermented tank tap Harvest yeast. Enter the volume and judge the Appearance and Smell. Both are a choice of three, such as Creamy, clean or Off — sour, sulphury. Using the same words makes slurries easy to compare.

Pitching and harvesting work without a signal too. The entry is saved on the phone and sent automatically.

Due for disposal

When a slurry reaches its strain's generation limit, it is marked Due for disposal. The app blocks nothing. Yeast is alive, and the brewer decides based on how the slurry looks. Remove a slurry with Discard.
