Brew sheet and cooling protocol

A batch's production record builds itself from what is entered on the floor. Nothing to copy out, just print it.

You do not have to write a batch's production record by hand. The app builds it from what is entered on the floor: brew day steps, measurements, transfers and materials used.

The record has two parts. The brew sheet covers one brew up to the transfer into the tank. The cooling protocol follows on and covers the tank contents from pitching to closing. A tank is often filled by several brews, so each brew has its own brew sheet.

Where to find them

  1. Open the tank under Batches.
  2. Each brewed batch has a Brew sheet button.
  3. The Cooling protocol button is in the tank header. The protocol links to the brew sheets of every brew in the tank.

What the brew sheet contains

  • Summary: brew day, transfer to tank, wort volume, original gravity, malt bill and brewhouse yield. For volume and gravity the recipe plan stands next to the actual value.
  • Brew day operations: time, duration, temperature, volume, gravity and additions for each step. A step that was not checked off stays on the list, just empty.
  • Brewhouse losses and evaporation during the boil.
  • Materials used by lot: supplier, amount and analysis, meaning malt extract or hop alpha.

What the cooling protocol contains

  • A plan-versus-actual summary: original gravity, final gravity, attenuation, alcohol, colour and volume loss.
  • Cellar losses by leg of the beer's path.
  • The cooling profile with its steps and when each was done.
  • A fermentation chart, a production timeline and every reading with its source: manual, automatic or laboratory.

Gaps are stated, not hidden

Missing values are never filled in by calculation. Both documents end with What is missing from this record, for example an unrecorded wort volume or days without a reading. A batch entered into the system retroactively says so right below the header.

Printing

  1. Click Print.
  2. Print on A4. Leave the browser header and footer switched on in the print dialog; they add page numbers.
  3. If you want a file, choose saving to PDF in the print dialog.

The header shows the date and time of printing, and every page shows the batch number. Two printouts of different age cannot be mixed up. At the bottom there is space for the date and a signature for production.
